Yummy Easter Rabbit Carrot Pancakes!

I saw this yummy looking carrot pancake recipe online and had to take it one step further to make bunny carrot Easter pancakes this morning for me and Shayla! They are REALLY good! I changed the recipe slightly with using all whole wheat flour and fake buttermilk (just add 3/4 teaspoon lemon juice to regular milk and let sit for 10 minutes). I think I found a new holiday tradition recipe for the files!!!


Carrot Pancakes (Makes 20-25 Pancakes)

1 1/4 Cup Flour
2 Tsp Baking Powder
1/2 Tsp Ground Cinnamon
1/4 Tsp Salt
1/4 Cup Walnuts, chopped
3 Tbsp Brown Sugar
3/4 Cup Buttermilk
1 Tbsp Canola or Vegetable Oil
1 Tsp Vanilla Extract
2 Large Eggs, whisked
1 1/2 Cups Carrots, shredded fine (about 3 carrots) - you can grate them, chop these in food processor or I used my Vitamix
Butter or Oil for cooking

1. Place the first 5 ingredients in a bowl and stir to combine.
2. In another bowl, place sugar, buttermilk, oil, vanilla, carrot and eggs and mix.
3. Add the dry ingredients to the wet and mix.
4. Heat a large skillet over medium heat and lightly coat with butter or oil.
5. Spoon about 1/4 cup of batter onto the skillet and cook for 2 minutes on each side or until golden.
6. Serve with honey or maple syrup.

5 Weeks Old!

The count continues as Mitchell hits the 5 week mark. He is still holding strong at 11 pounds (plus 4 ounces) I think he had his growth spurt last week. With more awake time and with me getting out of the house more and throwing him off schedule he has been a little more fussy but still as cute as can be! I love my little guy!

Girl (oh and boy) time!

I am so lucky to have so many wonderful friends in my life! Last week I was able to spend time with one of my favorite gals - my "past" (see trina I didn't say old) college roommates and closest college buddy - Trina and her 18 month old daughter Jessie who is quickly becoming one of Shayla's closest friends too - came to visit us from Tuscon! She wanted to come visit and meet baby Mitchell and help out and it worked out great because she ended up being here the exact same days Jon was away at a trade show in Georgia! Anyway, we had such a blast like ALWAYS and we had lots of playtime and she kept Shayla occupied and my house clean while I was busy with Mitchell! Love ya gal (and its her bday today too so HAPPY BIRTHDAY TRINA!)

One Month Old!

What - one month already??!!
Yep that's right? Mitchell is already One Month Old!
We celebrated with his first beach trip (: actually it was really for Shayla and our friends who are visiting from out of town (more pics with them this weekend!) . He loves soaking up the sun as you can see from these pics - don't worry it was only for a few minutes!
We are all doing great and love loving on our baby Mitchell (yes we call him Mitchell not Mitch - for now). You cannot see his still crazy hair because of hat, but more pics to come! He is growing big and steady and already 11 pounds according to my scale!!

3 Weeks Old!

Our baby boy is 3 weeks old already!

Wow! Time does fly by faster when you are busy with two kids! These last 3 weeks have been great and Mitchell continues to be such a great baby! His little faces crack me up - he is so endearing (see below)! Can't do anything with his hair (: I have had so much wonderful support from friends and family with meals and helping with Shayla (special shout out to my mom who was here a week and Kellie who has been taking Shayla to preschool and on play dates!). I am starting to feel normal again with very little pain and back to driving - a few more weeks to go though until I get the go ahead to pick up anything heavier than baby, housework, etc.

Happy St.Patricks Day from these Irish Kiddos!!!

So today was a great day! It was the first day I ventured out on my own and first time trying driving since Mitchell was born to a St Pattys Day party at the park with my moms group. We started the day off with green milk and green eggs and ham and lucky charms. Leprechauns left Shayla a t-shirt, hat and necklace. We had lots of fun at the park and lots more green goodies! Mitchell did great out and about but he has been sleeping almost all day with the combined car trips and being in the sling at the park so I hope he is not up all night (: Anyway, here are my two cute, adorable Irish kids (they are about 1/8 Irish since I am 1/4 Irish)...
